Gezellig Cookie: Caramel & Key Lime
Gezellig Cookies® was born in Florida and this is our homage to our birthplace. We’ve made a Key Lime caramel that looks and tastes just like the classic Key Lime custard found in Key Lime pie - only it is a delicious caramel. Applied to an Oat wafel with a touch of Wheat Bran and you have a delicious, slightly tart Key Lime Stroopwafel.
Enjoy a refreshing take on the stroopwafel - just like the pie!!

About the Producer
Cassandra Plas, owner of Gezellig cookies grew up eating Dutch cookies. Cookies like crispy rolled Kniepertjes, coconut macaroons and spicy speculaas, or “windmill cookies” made by her Grandmother Oma who immigrated to Canada.
Oma brought along an electric iron used to make Kniepertjes. Kniepertjes are paper thin vanilla flavored cookies pressed in a cookie iron and rolled into a cigar shape. Growing up, Cassandra’s familoy loved those kniepertjes and learned to make them and roll them – never mind the hot cookie and tender fingers).
In 2005, Cassandra set out to make her grandmother’s Dutch cookies for the holidays. Left with a big goopy mess on the iron, she quickly learned she ordered the wrong “Dutch Cookie Iron”. After a little research, Cassandra realized the it was designed for stroopwafels --- not kniepertjes. And that is how the idea of Gezellig Cookies was born.
After years of making the cookies for friends and family, Cassandra started Gezellig Cookies 10 years later in 2015.
Their goal is to bake the best Dutch cookies in Central Florida, using the best American ingredients such as organic fair trade sugar and local free range eggs. In addition to the Original which is based on the original recipe, the cookie company offers non-traditional variations like Vegan Original, Maple and Key Lime.
